Chef Francesco Moccia shares his secret on how to make Paccheri Pasta!
Paccheri pasta with yellow cherry tomatoes and eggplants

INGREDIENTS (1 person):

100 gr. “paccheri” pasta
30 gr. Eggplants
150 gr. Yellow cherry tomatoes
50 gr. “burrata” cheese
20 gr. Olives
10 gr. Almonds
20 gr. Pesto
extra virgin olive oil
basil leaves
salt

1. Boil water and drop the “paccheri” in boiling water. 

2. While pasta is cooking put olive oil and garlic in a pan and make them brown.

3. Add eggplants strips and make them brown as well.

4. Once eggplant are brown add olives and mix.

5. After olives, add cherry tomatoes and mix everything together for a couple of minutes.

6. Now that the sauce is ready add ”paccheri” in it and mix everything for a couple of minutes.

7. Move the pasta on a plate, add almonds, “burrata” cheese, basil leaves and spread basil pesto on it.
