Ingredients
• Watermelon 1-inch dice - 150gm
• Rocket leaves - 80 gm
• Sundried tomatoes - 20 gm
• Bread croutons - 10gm
• Strawberry vinaigrette - 20 ml
• cheese manouri (grill) - 100 gm
• Grated kefalotyri Greek cheese - 10gm
• Salt pepper to taste
• Oil Olive - 10 ml
Strawberry Reduction:
• White vinegar 1LTR
• Fresh strawberry 380 gm
• Sugar white 200 gm
• Watermelon 1-inch dice - 150gm
• Rocket leaves - 80 gm
• Sundried tomatoes - 20 gm
• Bread croutons - 10gm
• Strawberry vinaigrette - 20 ml
• cheese manouri (grill) - 100 gm
• Grated kefalotyri Greek cheese - 10gm
• Salt pepper to taste
• Oil Olive - 10 ml
Strawberry Reduction:
• White vinegar 1LTR
• Fresh strawberry 380 gm
• Sugar white 200 gm
o Put all ingredients together and refrigerate 24 hrs.
o After 24 hrs. transfer to a cooking pan and reduce fire slowly till you get the right syrupy consistency.
Strawberry vinaigrette
• Strawberry reduction 100 ml
• Fresh strawberry 350gm
• Sunflower oil 380ml
o Place reduction and fresh strawberry in a blender and, add oil and blend until you get a velvety consistency.
Plating
• Keep the 5 to 6 pieces of watermelon in a salad plate. Season rocket leaves and mix with olive oil sundried tomatoes, croutons and diced watermelon and place it on top.
• Cut and place grilled manouri cheese on both sides and grate cheese on top
• Sprinkle strawberry dressing g on top and serve.
